Edward Starkey (d. 1789) was a politician from Onslow County. After getting his start as his county's justice of the peace, Starkey served in the North Carolina Colonial Assembly in 1773. He represented Onslow in three sittings of the provincial congress before being elected to the North Carolina Council of State, in which body he served from 1776-1779. Later he continued to represent his native county in the North Carolina General Assembly, eventually serving as its speaker.
